The Passerina
A fresh and fragrant wine, excellent as an aperitif and to accompany fish dishes
Passerina is a grape variety of very ancient origin but of uncertain provenance; it is nevertheless considered an indigenous variety of central-eastern Italy. Its curious name derives from the rather small size of its berries and from the fact that sparrows, greedy for the pulp of this particular grape, often peck at its berries.
In the past, it was only used in blends, as, being a vine with good productivity and good grape quality, it was the ideal corrective wine to give freshness and rejuvenate other white wines. Passerina brings a bewitching, modern freshness. In the glass it displays clarity and elegance in a beautiful pale straw yellow colour with greenish highlights.
The aromas are fresh and decisive, with clear notes of floral scents, white flowers, broom, wisteria and linden, as well as pleasant mineral tones, accompanied by delicate and persistent citrus aromas. In the mouth it emphasises freshness, immediacy and pleasantness.
The acidity, which is a typical characteristic of this grape variety, stands out and vibrates.
A wine that makes freshness its best endowment, so it is to be enjoyed as an aperitif or accompanied by tasty vegetable and fish-based appetisers such as soups (also to be tried with Giuliese-style brodetto), shellfish, crustaceans and even raw fish dishes. Its richness in the acid component (freshness in acidity) also allows it to be made sparkling with both the Charmat and Classical Method (re-fermentation in the bottle).
Passerina can be vinified on its own, where its characteristics of minerality and freshness are enhanced, or also in blends with other grapes, including Pecorino. It is certainly a grape with a somewhat ambiguous name that gets people talking... as well as leaving us with the curious desire to try it at least once! Taste it!
