Teramo 'Virtues
Virtues represent an ancient Abruzzi dish linked to the Teramo area, traditionally prepared on the occasion of May Day. It is a long and complex recipe, rich in numerous varieties of ingredients. Legumes, such as beans, lentils, chickpeas, chickling peas, broad beans and peas, a wide variety of baby vegetables, potatoes, garlic and fresh onions.
And again, raw ham, pork rinds, the famous Teramo 'pallottine', lard, bacon and guanciale... but that's not all. Also on the plate is pasta, durum wheat, short, fresh egg pasta and various shapes. Oil, salt, tomato pulp and grated pecorino cheese to top it all off! So many ingredients for an extraordinary, unique and highly complex dish.
The result? An incredible harmony of flavours and textures and an extraordinary aroma... a truly irresistible dish. This recipe also takes on a strongly symbolic value as it testifies and tells of a society that wasted nothing and gathered, as still happens today on this occasion, in large tables to celebrate this occasion.
